Cheese and Spinach Stuffed Jumbo Pasta Shells

32 jumbo pasta shells

2 cups ricotta cheese

2 (10 ounce) packages frozen chopped spinach, thawed and drained

1 cup grated Parmesan cheese

2 tablespoons fennel seed

2 teaspoons dried basil

4 cloves garlic, minced

salt and pepper to taste

3 ½ cups spaghetti sauce
Cooking Instructions

Preheat your oven to 350°F (175°C).

Bring a large pot of salted water to a boil. Gently add the pasta shells and cook until they are slightly tender, then drain well.

Wring out any excess water from the spinach and place it in a large mixing bowl. Add ricotta, 1/3 cup Parmesan, fennel, basil, and garlic. Season with salt and pepper, then mix everything together.

Spread 1/2 cup of spaghetti sauce evenly on the bottom of a 9x13-inch baking dish.

Stuff each pasta shell with the spinach and cheese mixture. Arrange them in the dish with the filling facing up. Pour the remaining spaghetti sauce over the shells and sprinkle with the rest of the Parmesan cheese.

Cover the dish loosely with aluminum foil and bake in the preheated oven for about 30 minutes, until the dish is heated through.
