Cheese-Stuffed Spinach Manicotti

1 ½ cups shredded mozzarella cheese, divided

1 (8 ounce) package manicotti shells

2 (26 ounce) jars spaghetti sauce

Cooking Instructions

Preheat your oven to 350°F (175°C).

In a large mixing bowl, combine ricotta cheese, spinach, onion, egg, parsley, black pepper, and garlic powder. Add 1 cup of mozzarella and 1/4 cup of Parmesan, then stuff this mixture into uncooked manicotti shells.

In a separate bowl, mix spaghetti sauce and water. Pour 1 cup of this sauce into the bottom of a 9x13-inch baking dish, then arrange the stuffed manicotti in a single layer. Cover with the remaining sauce, and sprinkle the rest of the mozzarella and Parmesan cheese on top.

Bake in the preheated oven for 45 to 55 minutes, until the pasta shells are tender but still firm to the bite.

Complete steps 2 and 3, then cover the dish and refrigerate it for 8 hours or overnight. When you're ready to bake, remove it from the fridge and let it sit at room temperature for 30 minutes while the oven preheats. Proceed with baking as instructed.
