8 cups fresh broccoli

½ cup unsalted butter

2 tablespoons all-purpose flour

1 small onion, chopped

1 ¼ cups milk

salt and pepper to taste

4 cups shredded Swiss cheese

2 large eggs, beaten
Instructions

Preheat the oven to 325°F (165°C).

Steam the broccoli over 1 inch of boiling water, covering and cooking until crisp-tender, around 2 to 6 minutes. Drain the broccoli.

In a medium saucepan, melt butter over medium heat. Add flour, stirring and cooking until bubbly. Stir in onion, then add milk. Bring to a boil and cook for 1 minute. Remove from heat and season with salt and pepper.

Stir in the cheese and eggs until the cheese melts. Add the broccoli and stir to coat evenly. Transfer the mixture to a 9x13-inch baking dish.

Bake in the preheated oven for about 30 minutes, or until bubbly.
