Cheesy Potato Cakes

Ingredients

2 cups mashed potatoes

1 egg, beaten

½ cup all-purpose flour

salt to taste

1 pinch garlic salt

1 tablespoon butter

1 cup shredded Cheddar cheese
Instructions

In a medium bowl, combine mashed potatoes, egg, flour, salt (if needed), and garlic salt. Mix thoroughly.

Melt butter in a large skillet over low heat. Drop spoonfuls of the potato mixture (about 4 inches in diameter) into the skillet. Flatten to 1/2 to 1 inch thickness. Add a sprinkle of cheddar cheese in the center of each cake, then top with more potato mixture. Flip the cakes once the bottom is golden brown (about 10 minutes). Cook the other side until browned (another 10 minutes).

If your mashed potatoes are already flavored to your liking, consider using garlic powder or fresh garlic in place of garlic salt.
