Chef John's Crab-Stuffed Sole Fillets

Cooking Instructions
Preheat the oven to 400°F (200°C). Lightly coat a baking dish with cooking spray.
In a bowl, combine crabmeat, poblano pepper, panko breadcrumbs, green onion, lemon juice, salt, and black pepper. Mix until everything is well incorporated. In a separate bowl, blend together mayonnaise, lemon zest, and cayenne pepper.
Place the sole fillets on a flat surface with the smooth side facing up. Season with salt. Evenly distribute the crab mixture onto the fillets. Roll them around the stuffing and arrange them seam-side down in the prepared baking dish.
Spread half of the mayonnaise mixture over the sides and top of each fillet. Transfer the remaining mayonnaise mixture into a piping bag, then pipe it in a zigzag pattern over the fillets. Sprinkle paprika on top for added color and flavor.
Bake in the preheated oven for 15 to 20 minutes, or until the fish flakes easily with a fork and the topping is golden brown and crispy.
