Instructions
Slice the skirt steaks into 3 or 4 smaller portions to make them easier to marinate and fit into your dish.
In a large bowl, whisk together orange juice, lime juice, olive oil, garlic, salt, cumin, pepper, oregano, and cayenne pepper until well combined. Add the skirt steak pieces one at a time, ensuring each is thoroughly coated in the marinade. Toss in the sliced onions and mix them with the meat for full flavor infusion.
Transfer the marinade and steak mixture into a resealable plastic bag. Remove the air, seal the bag tightly, and place it on a dish. Refrigerate for 2 to 3 hours to allow the flavors to meld.
After marinating, move the steak pieces to a paper towel-lined sheet pan to drain for a couple of minutes before grilling.
Grill the steak over hot coals, starting with the first side for 3 to 4 minutes. Flip the meat and continue grilling the second side until it reaches an internal temperature of 125°F (53°C). The steak should have a shiny surface with juices starting to surface, signaling it's nearly done. Remove the steak from the grill and let it rest for a few minutes.
Slice the steak into 1/2-inch thick pieces and arrange them on a serving plate. Spoon the juices from the plate over the meat, drizzle with olive oil, and sprinkle with coarse salt and chopped cilantro. Serve with fresh lime wedges on the side.
