Instructions
Prepare a bowl filled with ice water.
Fill a saucepan with cold water and set it over medium heat. Stir in vinegar and salt, then bring the water to a gentle simmer. Reduce the heat to low to maintain a steady simmer.
Crack each egg into a small bowl, then carefully slide it into the simmering water, keeping the bowl close to the surface. Allow the egg whites to firm up for a minute or two, then use a silicone spatula to gently lift the egg to prevent sticking. Cook until the whites are firm and the yolk is still runny, about 6 minutes.
Using a slotted spoon, lift the poached egg from the water and gently place it into a bowl of ice water to halt the cooking process. To reheat, simmer the eggs gently for 1 1/2 to 2 minutes and remove with the slotted spoon. Tap the spoon on a dry paper towel to remove any excess water before serving.
