Chef John's Steak Pizzaiola

1 pound beef tenderloin steaks, cut into 4 medallions

1 tablespoon olive oil

1 cup sliced fresh mushrooms

2 teaspoons butter

1 pinch salt

1 cup sliced sweet and hot peppers

4 cloves garlic, crushed

½ cup white wine

¼ teaspoon dried oregano

1 cup tomato concassé (see Recipe Tip for the recipe link)

2 tablespoons chopped fresh oregano
-
1 teaspoon balsamic vinegar

1 pinch red pepper flakes

1 pinch salt and ground black pepper to taste
Instructions
Generously season the steak medallions with salt and freshly ground black pepper on both sides.
Heat olive oil in a large skillet over high heat. Add the steaks and cook for about 2 minutes on each side until browned. Transfer to a plate and reserve the oil in the skillet.
Add the mushrooms and butter to the skillet, seasoning with salt. Cook and stir until the mushrooms soften and start to brown, about 5 to 6 minutes. Reduce the heat to medium, then add the peppers and cook for another 2 minutes. Stir in the garlic and cook for 1 more minute. Pour in the wine and sprinkle with dried oregano. Turn the heat up to medium-high and cook until most of the wine has evaporated, around 3 minutes.
Mix the tomato concassé into the mushroom mixture and simmer until the tomato softens, about 3 to 4 minutes. Add fresh oregano, balsamic vinegar, and red pepper flakes. Stir well and adjust the seasoning with salt and black pepper to taste.
Return the steaks to the skillet with the mushroom sauce and cook until they are heated through and reach your desired level of doneness, about 4 to 10 minutes.
