Chicken A La Orange Delight

4 skinless, boneless chicken breasts

1 tablespoon vegetable oil

2 ½ cups orange juice

3 tablespoons cornstarch

½ cup hot water

3 tablespoons honey

¼ teaspoon ground ginger
Cooking Instructions

In a skillet, heat 1 tablespoon of oil over medium heat and brown the chicken breasts until the juices run clear.

Pour in orange juice, and when it starts to bubble around the edges, stir in cornstarch dissolved in hot water. In a separate cup, combine ginger and honey, then add to the orange juice mixture. Continue cooking until the sauce thickens and slightly caramelizes. Serve immediately.
