6 skinless, boneless chicken breast halves

¼ cup white wine

1 (8 ounce) package penne or other pasta of your choice

1 large white onion, chopped

1 tablespoon chopped garlic

2 (8 ounce) packages sliced fresh mushrooms

2 cups creme fraiche

3 tablespoons sour cream

½ cup grated Parmesan cheese for topping
Step-by-Step Instructions

Heat oil in a large skillet over medium-high heat. Add the chicken and sauté until golden brown. Pour in white wine and season with salt and pepper. Lower the heat and let it simmer until the chicken is fully cooked and the juices run clear, about 20 minutes.

While the chicken cooks, bring a large pot of salted water to a boil. Add the pasta and cook, stirring occasionally, until al dente, about 10 minutes. Drain and set aside.

Once the chicken is done, cut it into cubes and set aside. In the same skillet, add the onion and garlic to the leftover juices and cook for about 5 minutes, until the onions soften. Stir in the mushrooms and sauté until they become tender.

Add the cooked chicken back to the skillet along with crème fraîche and sour cream. Stir to combine and heat through. Serve the creamy chicken sauce over the cooked pasta and garnish with freshly grated Parmesan cheese.
