Chickpea and Quorn Curry Delight

2 tablespoons vegetable oil

1 (12 ounce) package Quorn™ Chicken-Style Recipe Tenders

1 medium onion, chopped

3 cloves garlic, crushed

½ teaspoon cumin seed

½ teaspoon black mustard seed

1 teaspoon ground turmeric

1 teaspoon ground cumin
-
1 teaspoon ground coriander
-
1 teaspoon chili powder
-
1 teaspoon salt

2 teaspoons tomato puree

1 (8 ounce) can chickpeas (garbanzo beans), drained

1 (14 ounce) can diced tomatoes

1 cup vegetable broth

1 teaspoon garam masala
Instructions

Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Brown the Quorn in the oil, then remove and set aside.

In the same pan, add the remaining tablespoon of oil and heat over medium. Cook the onion, garlic, cumin seeds, and mustard seeds for 3 to 5 minutes until the onion softens.

Add the turmeric, cumin, coriander, chili powder, and salt. Stir in the tomato paste, then mix in the Quorn, chickpeas, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat to a simmer for 20 to 25 minutes. Remove from heat and stir in the garam masala.
