Cilantro-Lime Slaw

Required Ingredients

¾ cup mayonnaise

1 lime, zested

2 teaspoons fresh lime juice

2 cloves garlic, minced

2 teaspoons sweet chili sauce

2 teaspoons white sugar

3 tablespoons finely chopped fresh cilantro

¼ red onion, finely diced, or more to taste

4 cups shredded green cabbage, or more to taste
Instructions

In a large bowl, whisk together mayonnaise, lime zest, lime juice, rice vinegar, garlic, sweet chili sauce, and sugar until the sugar is dissolved. Add cilantro and red onion to the dressing and mix well. Gradually stir in the cabbage, about 1 cup at a time, until everything is well-coated with the dressing.
Chef’s Tip
Before adding the vegetables, taste the dressing and adjust the ingredients as needed to match the dish you're serving with the slaw. For example, I like to add extra sweet chili sauce and rice vinegar for an Asian twist when serving with wonton tacos. For fish tacos, I prefer to increase the lime zest and juice. Occasionally, I swap some of the mayo for sour cream for added creaminess.
If you don’t have sweet chili sauce, try using chopped green chilies instead, but remember to double the sugar amount.
The lime zest is optional—feel free to skip it if you only have lime juice on hand.
