1 cup chicken broth

1 (4 pound) whole chicken, rinsed and patted dry

½ cup unsalted butter, cut into 1 tablespoon-sized pieces

2 navel oranges, halved

salt and ground black pepper to taste

2 cloves garlic, minced

½ cup unsalted butter, melted

2 sprigs fresh rosemary

2 sprigs fresh thyme

2 sprigs fresh sage
Instructions
Preheat the oven to 350°F (175°C). Pour chicken broth into a small roasting pan and set it aside for later use.
Carefully lift the skin from the chicken breasts and thighs, then place 1 tablespoon-sized pieces of butter underneath the skin. Transfer the chicken to the roasting pan.
Juice the orange halves over the chicken and stuff the rinds into the chicken’s cavity. Use kitchen twine to tie the chicken legs together. Season the chicken with salt and pepper, then rub minced garlic all over. Pour 1/2 cup melted butter over the chicken and place herb sprigs on the breasts and around the legs. Cover the pan with aluminum foil.
Roast in the preheated oven for 20 minutes. Remove the foil, baste the chicken with the pan juices, and continue cooking until the chicken is no longer pink. The internal temperature should reach 165°F (74°C) when a thermometer is inserted into the thickest part of the thigh, not touching the bone. Baste every 10–15 minutes once uncovered. Let the chicken rest for 10 minutes before carving.
