Classic Baked Mac and Cheese

2 cups uncooked elbow macaroni

4 tablespoons butter

2 tablespoons all-purpose flour

2 cups milk

¼ onion, minced

salt and pepper to taste

¼ pound processed cheese food

¼ pound shredded Cheddar cheese

¼ pound shredded Swiss cheese
Instructions
Set your oven to 350°F (175°C) to begin the baking process.
Cook the elbow macaroni following the instructions on the package.
In the meantime, melt butter in a small saucepan over medium-high heat. Stir in the flour to create a creamy paste. Gradually add the milk, stirring constantly until the mixture reaches a vigorous boil. Continue stirring for another minute, then remove from heat and set aside.
Once the macaroni is ready, layer half of it into the bottom of a greased 9x13-inch baking dish. Follow with half of the grated onion, half of the salt and pepper, and half of the cheese. Repeat the layering process with the remaining macaroni, onion, salt, pepper, and cheese, then pour the reserved white sauce over the top. Dot the surface with small pats of butter for added richness.
Cover and bake in a preheated oven at 350°F (175°C) for 45 minutes.
