Classic Bolognese Sauce

1 large onion, minced

4 slices bacon, cut into 1/2 inch pieces

1 pound lean ground beef

½ pound ground pork

1 (28 ounce) can Italian plum tomatoes

½ pound fresh mushrooms, sliced

6 ounces tomato sauce

2 carrots, shredded

1 stalk celery, chopped

½ cup dry white wine

½ cup chicken stock

½ teaspoon dried basil

½ teaspoon dried oregano

salt and pepper to taste

1 pound pasta
Cooking Instructions
Heat oil in a large skillet over medium heat. Add the onion, bacon, and garlic, cooking until the bacon crisps up and the onions soften, about 10 minutes. Use a slotted spoon to remove the bacon and onion mixture and place it on a paper towel-lined plate to drain. Set aside.
Place the large skillet back over medium-high heat. Brown and crumble the ground beef and pork, stirring occasionally, for about 5 to 7 minutes. Drain off any excess fat and discard it.
Combine the bacon mixture with tomatoes, mushrooms, tomato sauce, carrots, celery, wine, stock, basil, oregano, salt, and pepper into the meat. Bring the mixture to a boil. Reduce the heat, cover, and simmer the sauce for 1 hour, stirring occasionally.
In the meantime, bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 8 to 10 minutes. Drain the pasta once done.
Serve the hot sauce over freshly cooked pasta.
Cooking Tips
For a fresh twist, try swapping 2 teaspoons of chopped fresh basil in place of the 1/2 teaspoon of dried basil.
Leftover sauce? Simply freeze it for a convenient meal later on.
