Classic Chicken Tetrazzini Dish

8 chicken tenderloins

¾ cup fresh sliced mushrooms

1 red bell pepper, chopped

½ yellow bell pepper, chopped

1 (8 ounce) package uncooked spaghetti

¼ cup butter

¼ cup all-purpose flour

1 cup chicken broth

1 cup half-and-half

1 teaspoon garlic salt

ground black pepper, to taste

½ cup shredded Swiss cheese

⅓ cup grated Parmesan cheese (Optional)

¼ cup grated Parmesan cheese for topping (Optional)
Instructions

In a large nonstick skillet, cook chicken tenderloins, seasoning with salt and pepper to taste. Add in mushrooms and bell peppers, cooking until the vegetables are soft and tender.

Prepare the spaghetti according to the package instructions, drain, and set aside.

In a large saucepan, melt butter or margarine and whisk in the flour. Gradually add the chicken broth and half-and-half, stirring constantly over medium-low heat until the sauce thickens. Season with garlic salt and black pepper, to taste. Stir in Swiss and Parmesan cheeses, and continue to cook, stirring, until the cheeses have melted into the sauce.

Mix in the cooked chicken and vegetables, heating through. Toss the mixture with the cooked pasta and top with grated Parmesan cheese, if desired.
