Classic French Canadian Tourtière

1 pound lean ground pork

½ pound lean ground beef

1 onion, diced

1 clove garlic, minced

½ cup water

1 ½ teaspoons salt

½ teaspoon dried thyme, crushed

¼ teaspoon ground sage

¼ teaspoon ground black pepper

⅛ teaspoon ground cloves

1 (14.1 ounce) package double-crust pie pastry, thawed
Instructions

In a saucepan, combine pork, beef, onion, garlic, water, salt, thyme, sage, black pepper, and cloves. Cook over medium heat, stirring occasionally, until the mixture comes to a boil. Reduce the heat to low and simmer until the meat is cooked through, about 5 minutes. Let the mixture cool to room temperature.

Preheat your oven to 425°F (220°C).

Transfer the meat filling into the prepared pie crust. Place the top crust over the filling, pinch the edges to seal, and make slits in the top to allow steam to escape. Cover the edges of the pie with aluminum foil strips.

Bake the pie in the preheated oven for 20 minutes, then remove the foil and continue baking for another 15 to 20 minutes until the crust is golden brown. Let the pie cool for 10 minutes before slicing.
