Instructions

In a cocktail shaker, muddle fresh raspberries and thyme. Pour in gin, egg white, simple syrup, and lemon juice. Shake vigorously until the mixture stops making a sloshing sound and feels tightly packed. Add ice to fill half the shaker, then shake again until very cold. Strain into a coupe or cocktail glass. Optionally, garnish with a dusting of cinnamon, a curl of lemon zest, or a sprig of thyme.
Chef's Tips:
A one-ounce portion of pasteurized liquid egg whites can be used in place of a traditional egg white.
Homemade Simple Syrup: Combine 1 cup sugar and 1 cup water in a Mason jar, shake until sugar dissolves. If your arm gets tired, set it down and let the sugar dissolve on its own. Store in the fridge, covered, for up to 3 weeks.
