Cognac-Infused Shrimp

2 cloves garlic, minced

½ cup thinly sliced shallots

1 pound shrimp, peeled and deveined

1 dash dried red pepper flakes (Optional)

¼ cup oil-packed sun-dried tomatoes, drained and diced

½ cup cognac

½ cup fat free half-and-half
Cooking Instructions

In a large skillet, heat butter and olive oil over medium-high heat. Add garlic and shallots, sautéing them until they become golden brown. Toss in the shrimp, seasoning with salt, pepper, and red pepper flakes. Stir in the sun-dried tomatoes and cook, stirring occasionally, for about 5 minutes, until the shrimp begin to brown.

Pour the cognac into the skillet, scraping the browned bits off the bottom of the pan. Allow the mixture to come to a boil. Once boiling, lower the heat, then stir in half-and-half and simmer for about 5 minutes, or until the sauce slightly thickens.
