Crab-Stuffed Flounder Fillets

Ingredients Needed

1 ½ pounds flounder fillets

1 cup crabmeat - drained, flaked and cartilage removed

3 crushed saltine crackers

1 tablespoon finely chopped green bell pepper

¼ teaspoon ground dry mustard

¼ teaspoon Worcestershire sauce
-
¼ teaspoon salt
-
ground white pepper to taste

1 egg white
-
1 tablespoon mayonnaise

¼ cup butter, melted
For the Topping:

1 egg yolk
-
5 tablespoons mayonnaise
-
1 tablespoon dried parsley
-
½ teaspoon paprika
Instructions for Preparation

Prepare the ingredients and preheat your oven to 400°F (200°C). Rinse the flounder fillets and pat them dry with paper towels. Lightly coat a shallow baking dish with cooking spray or butter.

In a medium bowl, mix together crabmeat, crushed saltines, bell pepper, mustard, Worcestershire sauce, salt, and white pepper. In a separate small bowl, whisk together egg white and 1 tablespoon of mayonnaise, then add to the crab mixture and combine well.

Brush the fillets with melted butter and place them in the prepared baking dish. Spoon the crab mixture on top of the fillets and drizzle with any remaining melted butter. Bake in the preheated oven for 15 minutes.

For the topping, beat the egg yolk lightly in a small bowl and stir in 5 tablespoons of mayonnaise. After the fish has baked, remove it from the oven and spread the egg-mayo mixture over the crab stuffing, then sprinkle with parsley and paprika.

Increase the oven temperature to 450°F (230°C) and bake for an additional 5 to 6 minutes, or until golden and bubbly.
