Ingredients List
-
1 cup dry fusilli pasta
-
3 tablespoons olive oil
-
6 chicken tenderloins, cut into chunks
-
1 tablespoon dried minced onion
-
1 tablespoon dried basil
-
1 tablespoon dried parsley
-
garlic powder to taste
-
salt and pepper to taste
-
1 (10.5 ounce) can condensed cream of chicken soup
-
1 (10.5 ounce) can condensed cream of mushroom soup
-
2 cups frozen mixed vegetables
-
1 cup dry bread crumbs
-
2 tablespoons grated Parmesan cheese
-
2 tablespoons butter, melted
Instructions
Preheat your oven to 400°F (200°C). Lightly coat a medium-sized baking dish with cooking spray or butter.
Bring a large pot of water with a pinch of salt to a boil. Cook the fusilli in the boiling water, stirring occasionally, until it's tender yet still slightly firm to the bite, about 10 to 12 minutes.
Heat some oil in a skillet over medium heat. Add the chicken and season with minced onion, basil, parsley, garlic powder, salt, and pepper. Cook, stirring occasionally, until the chicken is cooked through and the juices run clear. Stir in the cooked fusilli, cream of chicken soup, cream of mushroom soup, and mixed vegetables. Transfer the mixture to the prepared baking dish.
In a small bowl, combine bread crumbs, Parmesan cheese, and melted butter. Sprinkle this mixture evenly over the casserole.
Bake the casserole in the preheated oven for about 30 minutes, or until it’s bubbling and the top is lightly browned.

Chef’s Tip
I happened to have some two-day-old beer bread, which worked perfectly for making the bread crumbs in this dish. Its crumbly texture is ideal, and when buttered and toasted, the sweet flavor becomes even more delicious!
