Creamy Oyster Mushroom Linguine

1 (16 ounce) package linguine pasta

½ cup butter

1 pound oyster mushrooms, chopped

⅓ cup chopped fresh parsley

salt and ground black pepper to taste

⅔ cup heavy whipping cream

4 green onions, chopped

¼ cup Parmesan cheese
Instructions

Bring a large pot of salted water to a boil. Cook the linguine until al dente, about 11 minutes. Drain and set aside in a serving bowl.

In a large skillet, melt butter over medium heat. Add the oyster mushrooms and cook, stirring frequently, until tender and golden brown, about 5 minutes. Stir in parsley, salt, and pepper, and cook for another minute. Add the heavy cream, bring to a simmer, and cook until the sauce thickens slightly, about 5 minutes.

Pour the mushroom sauce over the pasta in the serving bowl and toss to coat. Add green onions and Parmesan cheese, then toss again until everything is well combined.
