Creamy Zucchini Alfredo

1 (12 ounce) package uncooked egg noodles

3 tablespoons vegetable oil

2 cloves garlic, minced

4 cups shredded zucchini

½ cup milk

4 ounces cream cheese, cubed

½ cup chopped fresh basil

salt and pepper to taste

¼ cup grated Parmesan cheese
Instructions

Bring a large pot of salted water to a boil. Add egg noodles and cook for 8-10 minutes, or until tender. Drain well.

In a skillet, heat oil over medium heat. Add garlic and cook for 2 minutes. Stir in zucchini and cook for another 10 minutes, letting some moisture evaporate.

Pour milk into the skillet and stir in cream cheese until melted. Add basil, season with salt and pepper, and finish with a sprinkle of Parmesan. Serve over the prepared noodles.
