Crispy Baked Zucchini Fries with Panko Coating

3 small zucchini, cut into french-fry shaped pieces

2 large eggs, beaten

1 cup panko bread crumbs

¼ cup grated Parmesan cheese

2 tablespoons Italian seasoning
Instructions

Preheat your oven to 425°F (220°C) and line a baking sheet with aluminum foil.

Season the zucchini with salt and set them aside.

In one shallow bowl, whisk the eggs. In another, combine breadcrumbs, Parmesan, and Italian seasoning.

Dip each zucchini piece into the egg mixture, then press into the breadcrumb mixture, coating evenly. Shake off any excess breadcrumbs and arrange the coated zucchini on the prepared baking sheet.

Bake in the preheated oven for about 15 minutes, or until golden and crispy.
