Crispy Chicken with a Flavorful Coating

2 cups cheese flavored crackers (such as Cheez-It®), crushed

1 cup French-fried onions, crushed

½ cup Italian bread crumbs

2 teaspoons sesame seed, toasted

salt and ground black pepper to taste

4 skinless, boneless chicken breast halves - cut in half

3 tablespoons mayonnaise
Instructions
Preheat the oven to 450°F (230°C). Lightly coat a baking dish with cooking spray.
In a bowl, combine cheese-flavored crackers, crispy French-fried onions, Italian breadcrumbs, sesame seeds, salt, and pepper. Set the mixture aside.
Rinse the chicken breasts and pat them dry. Coat one side of each chicken breast with a thin layer of mayonnaise, then press that side into the cracker mixture. Spread a thin layer of mayonnaise on the other side of the chicken and cover it with the remaining cracker mixture, pressing gently to adhere. Arrange the chicken breasts in the prepared baking dish. Sprinkle any leftover cracker mixture over the top and lightly spray with cooking spray.
Bake in the preheated oven until the chicken is fully cooked, no longer pink in the center, and the juices run clear, about 35 to 40 minutes. A meat thermometer should register at least 165°F (74°C) when inserted into the center.
