Crispy Duck Fat Steak Fries

2 large russet potatoes, each cut into 8 thick steak fry-size wedges

1 tablespoon chopped fresh thyme

1 pinch cayenne pepper

salt and ground black pepper to taste

2 tablespoons duck fat, melted, or more to taste
Cooking Instructions
Preheat your oven to 325°F (165°C) and line a baking sheet with foil to prevent sticking.
Place the potato wedges in a mixing bowl. Sprinkle with thyme, cayenne pepper, salt, and black pepper. Drizzle melted duck fat over the potatoes and toss them to coat evenly.
Arrange the potato wedges, skin-side down, on the prepared baking sheet. Season with a little more salt on top.
Bake in the preheated oven for 40 minutes. Increase the temperature to 450°F (230°C). Flip the potatoes onto their sides and bake for an additional 10 minutes. Flip again and cook until golden brown, about 10 more minutes.
