Crispy Fried Cornmeal Mush

1 cup yellow cornmeal

1 teaspoon salt

1 tablespoon unsalted butter
Cooking Instructions

Grease a 9x5-inch loaf pan lightly and set aside.

Bring water to a boil in a medium saucepan, then lower heat to medium. Stir in cornmeal and salt, cooking and stirring until the mixture thickens.

Pour the cornmeal mixture into the greased loaf pan. Cover and refrigerate overnight to set.

Cut the chilled cornmeal into 1-inch thick slices. Melt butter in a skillet over medium-high heat and fry the slices until golden brown on both sides.
