Crispy Fried Soft-Shell Crabs

4 soft-shell crabs

1 quart oil for frying, or as needed

½ cup milk

1 large egg

1 cup all-purpose flour

salt and pepper to taste
Cooking Instructions

Gently lift one pointed side of the crab’s top shell, remove and discard the gills. Lower the shell and repeat on the opposite side. Detach the tail flap by twisting and pulling it off. Using scissors, cut behind the eyes to remove the face. Repeat the process for the remaining crabs. Rinse thoroughly under cold water and pat dry with paper towels.

Heat the oil in a deep fryer to 365°F (180°C).

In a shallow bowl, whisk together milk and egg. In another shallow bowl, combine flour, salt, and pepper. Lightly salt each crab. Coat each crab in the flour mixture, shaking off the excess, then dip into the egg wash, letting any excess egg drip back into the bowl. Press gently into the flour mixture again to ensure a complete coating.

In batches if necessary, carefully drop the crabs into the hot oil and fry for 1 to 2 minutes on one side, until golden brown. Flip and fry the other side for another 1 to 2 minutes, until evenly browned. Remove and drain on paper towels.
