Crispy Green Onion Pancakes

3 cups bread flour

1 ¼ cups boiling water

2 tablespoons vegetable oil

1 bunch green onions, finely chopped

In a large mixing bowl, combine the flour and boiling water using a fork. Knead the mixture into a dough ball, then cover the bowl with plastic wrap. Let the dough rest for 30 to 60 minutes.

Divide the dough into 16 equal portions. Roll each portion into a circle, about 1/4 inch thick. Brush each circle with oil, season with salt and pepper, and top with roughly 1 teaspoon of chopped green onions. Roll each circle up like a cigar, then coil it into a disc shape and pinch the ends together. Flatten each coil back into a 1/4 inch thick pancake.

Heat 2 teaspoons of oil in a large skillet. Fry the pancakes until golden and crispy, about 2 minutes per side. Add more oil between batches, if needed.
