Prepare all the necessary ingredients before starting.

Heat 1 tablespoon of oil in a large skillet over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes. Remove the skillet from the heat.
In a large mixing bowl, combine the shredded chicken, breadcrumbs, and two eggs. Add the sautéed onion and mix until well incorporated. If the mixture is too dry to form patties, add the remaining egg. Season with parsley, salt, and pepper, and stir to combine.
