Crispy Lemon Quinoa

¼ cup pine nuts

1 cup quinoa

2 cups water

¼ cup fresh lemon juice

2 stalks celery, chopped

¼ red onion, chopped

¼ teaspoon cayenne pepper

1 bunch fresh parsley, chopped
Instructions

Lightly toast the pine nuts in a dry skillet over medium heat, stirring frequently to avoid burning. This should take around 5 minutes. Set them aside to cool down.

In a pot, combine quinoa, water, and salt. Bring it to a boil, then lower the heat to medium. Let it cook until the quinoa becomes tender and the water is absorbed, about 10 minutes. Let it cool slightly, then fluff it with a fork.

Transfer the quinoa to a serving dish and mix in the pine nuts, lemon juice, celery, onion, cayenne pepper, cumin, and parsley. Adjust the salt and pepper to taste before serving.
