Generously season both sides of the pork chops with salt and pepper, then coat evenly with flour, using the back of a spoon to spread it over the entire surface.

In a 12-inch non-stick pan, heat oil over medium heat until it shimmers. Gently add the pork chops and fry them until golden brown, about 4 minutes. Avoid flipping them too soon.

Once the edges begin to brown, flip the chops and cook the other side until the center is no longer pink and the exterior is golden, roughly another 4 minutes. To check doneness, an instant-read thermometer should read 145°F (63°C) in the thickest part. Lower the heat if the chops are browning too fast. Serve immediately while hot.
