Crispy Roasted Spatchcock Chicken with Golden Potatoes

1 (2 to 3 pound) roasting chicken

Instructions
Begin by preheating the oven to 400°F (200°C). Lightly coat the bottom and drip tray of a broiler pan with cooking spray.
Arrange sweet potatoes, regular potatoes, and onion slices in the prepared pan. Place the drip tray on top to cover them.
Place the chicken breast-side down on a cutting surface. Use kitchen shears to cut along both sides of the backbone from top to bottom, removing it. Flip the chicken over, spreading it open. Press down on the breast to break the breastbone.
Rub olive oil over the chicken and season generously with salt and pepper. Transfer the chicken to the top drip tray of the broiler pan.
Roast in the preheated oven until the juices run clear, and an instant-read thermometer inserted into the thickest part of the thigh reads 165°F (74°C), approximately 1 hour.
Allow the chicken to rest for about 10 minutes before slicing. Serve alongside the roasted potatoes and onions.
