Crispy Salmon Patties with Creamy Dill Sauce
Ingredients List
For the Salmon Patties:

1 (5 ounce) can salmon, drained and flaked

½ cup dry bread crumbs

2 tablespoons minced onion

1 tablespoon Dijon mustard

1 large egg, lightly beaten

1 teaspoon lemon juice

1 tablespoon olive oil, or as needed
For the Dill Sauce:

¼ cup light sour cream

1 teaspoon dill weed

¼ teaspoon garlic powder

Instructions

Prepare the patties: In a bowl, combine the salmon, breadcrumbs, onion, Dijon mustard, egg, and lemon juice. Shape the mixture into two patties.

Heat oil in a skillet over medium-high heat. Add the patties, season with salt and pepper, and cook until the bottom is golden brown, about 4 minutes.

While the patties cook, prepare the dill sauce: In a bowl, mix together sour cream, dill, garlic powder, and salt.

Flip the patties, season with salt and pepper again, and cook until the second side is golden brown, about 4 minutes more. Check for doneness with an instant-read thermometer—it should read at least 145°F (63°C) in the center. Serve with the dill sauce.

We make our own breadcrumbs using a food processor and whole wheat bread. I often double the dill sauce recipe and store any extra in the fridge to save time for the next meal.
