Crispy Southern Fried Green Tomatoes
Ingredients Needed

1 cup all-purpose flour

2 large eggs

2 tablespoons water

1 cup yellow cornmeal

sea salt and ground black pepper to taste

2 pounds green tomatoes, sliced

1 cup canola oil for frying, or as needed
Cooking Instructions

Line a baking sheet with parchment paper.

In one shallow bowl, add flour. In a second shallow bowl, whisk together eggs and water. In a third shallow bowl, mix cornmeal, salt, and pepper.

Coat each tomato slice first in flour, then dip it into the egg mixture. Press the coated tomato into the cornmeal mixture, shake off any excess, and arrange them in a single layer on the prepared baking sheet.

Heat 1/4 inch of canola oil in a large skillet over medium heat until hot and shimmering. Fry the tomatoes in batches, cooking each side for 3-4 minutes or until golden and crispy. Remove from the skillet and drain on paper towels.
