Crispy Spicy Tuna Fish Cakes

Ingredients Required

1 large potato, peeled and cubed

4 (3 ounce) cans tuna, drained

¼ cup chopped onion

1 egg

1 tablespoon Dijon mustard

1 tablespoon dry bread crumbs, or as needed

1 ½ teaspoons garlic powder

1 teaspoon Italian seasoning

¼ teaspoon cayenne pepper

salt and ground black pepper to taste

1 tablespoon olive oil
Instructions
Place the potato in a small pot and cover with salted water. Bring to a boil over high heat, then reduce the heat to medium-low. Cover and simmer until the potato is tender, about 20 minutes. Drain the water and let the potato steam dry for 1-2 minutes in the pot. Transfer the potato to a large bowl and mash it using a potato masher or fork.
Combine tuna, chopped onion, egg, mustard, breadcrumbs, garlic powder, Italian seasoning, cayenne pepper, salt, and black pepper in a bowl. Stir everything together until well mixed. Divide the mixture into eight equal portions and shape each portion into a patty.
Heat olive oil in a skillet over medium heat. Place the tuna patties in the skillet and cook until golden and crispy, about 3 minutes per side.
