Crockpot Salsa Chicken

2 tablespoons taco seasoning mix

1 cup diced tomatoes with habaneros (such as RO*TEL® Hot)

1 cup finely chopped onion

½ cup finely chopped celery

½ cup shredded carrot

1 cup prepared salsa

¼ cup water
Instructions

Place chicken in the bottom of a slow cooker. Sprinkle taco seasoning over the chicken. Layer on diced tomatoes with habaneros, onion, celery, and carrot, then top with salsa. Add water over the whole mixture.

Cook on Low for 6 to 8 hours until the chicken is tender and easily shredded. Ensure the internal temperature reaches 165°F (74°C) using an instant-read thermometer.

Shred the chicken with two forks and stir it into the salsa mixture.
