Crustless Mini Quiches

1 pound bulk sausage

1 cup shredded Cheddar cheese

1 cup shredded Swiss cheese

½ cup chopped green onion (Optional)

⅔ cup instant potato flakes

½ cup heavy whipping cream

salt and ground black pepper to taste
Instructions

Preheat the oven to 325°F (165°C). Lightly coat 36 mini muffin cups with cooking spray.

In a large skillet over medium-high heat, crumble the sausage and cook, stirring occasionally, for about 10 minutes until browned and crumbly. Drain off any excess fat.

Evenly distribute the cooked sausage, Cheddar cheese, Swiss cheese, and green onions among the muffin cups.

In a separate bowl, whisk together eggs, potato flakes, and cream. Season with salt and pepper. Pour the egg mixture over the sausage and cheese in each muffin cup.

Bake in the preheated oven for about 22 minutes, or until the quiches are set in the center and lightly golden on top. Let them cool for 5 minutes before serving.
