⅛ teaspoon annatto powder

1 cup frozen peas, thawed

1 (4 ounce) jar sliced pimento peppers, for garnish
Instructions

Rinse the rice in a fine-mesh sieve under cold water until it runs clear. Shake out any excess water.

Transfer the rice to a large pot with a snug-fitting lid. Add water, then stir in the onion, salt, annatto powder, paprika, and pepper. Bring to a boil over medium-high heat. Once boiling, lower the heat, cover, and let it simmer. After 10 minutes, gently fold in the peas. Continue cooking until the rice is tender and all the water has been absorbed, about 15 to 20 minutes. Garnish with pimento slices before serving.
