Curried Sweet Potato Latkes

½ cup all-purpose flour

¾ teaspoon salt

¼ teaspoon black pepper

2 eggs, lightly beaten

½ cup milk

4 cups peeled, shredded sweet potato

2 cups oil for frying, or as needed
Instructions

In a large bowl, mix together flour, curry powder, white sugar, brown sugar, baking powder, cumin, salt, cayenne pepper, and black pepper.

In a separate bowl, whisk eggs and milk together. Add the egg mixture to the dry ingredients and stir until smooth with no lumps. Fold in the grated sweet potatoes until fully incorporated.

Heat a generous amount of oil in a large skillet over medium heat. Drop spoonfuls of batter into the hot oil, using a spatula to flatten them into round patties. Fry for about 3 to 5 minutes on each side, or until golden brown and crispy.

Remove from the pan and drain excess oil on paper towels. Serve immediately while hot.
