Curry-Spiced Roasted Sweet Potatoes and Cauliflower

2 sweet potatoes, peeled, and cut into 3/4-inch chunks

½ head cauliflower, cut into bite-size pieces

1 tablespoon curry powder

Instructions

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a bowl, mix together the sweet potatoes, cauliflower, black pepper, olive oil, curry powder, maple syrup, garlic, thyme, and salt until well coated. Spread the mixture onto the prepared baking sheet.

Roast in the preheated oven for about 20 minutes, or until the vegetables are tender and lightly browned.
