1 quart vegetable oil for frying, or as needed

½ cup all-purpose flour

½ cup self-rising cornmeal

½ onion, minced

½ cup milk

1 egg, beaten

1 stalk celery, minced

2 cloves garlic, minced

1 pinch Cajun seasoning, or to taste
Instructions

Heat oil in a deep fryer or large pot to 375°F (190°C).

In a bowl, combine flour, cornmeal, chopped onion, milk, egg, celery, garlic, and Cajun spices, stirring until smooth.

Carefully drop spoonfuls of batter, roughly the size of a ping pong ball, into the hot oil. Fry for about 5 minutes or until golden brown. Use a slotted spoon to remove the hush puppies and place them on a paper towel-lined plate. Continue with the remaining batter.
