Curtido: El Salvador's Refreshing Cabbage Salad

½ head green cabbage, cored and shredded

1 carrot, grated

1 quart boiling water

3 green onions, minced

1 cup distilled white vinegar

½ cup water

2 teaspoons dried oregano
Instructions

In a large bowl, combine the shredded cabbage and carrot. Pour boiling water over the mixture and let it steep for 5 minutes. Drain thoroughly, then return the cabbage and carrot to the bowl. Add the chopped green onion, vinegar, 1/2 cup of water, and oregano. Toss everything together until well mixed. Refrigerate for 20 minutes before serving.
