1 (16 ounce) package cavatappi (corkscrew macaroni)

½ cup all-purpose flour

5 ½ cups milk, divided

2 ½ cups shredded smoked Gouda cheese

2 cups shredded sharp Cheddar cheese

1 ½ cups shredded Swiss cheese

1 ½ cups grated Parmesan cheese, divided

½ cup dry bread crumbs

1 tablespoon truffle oil
Cooking Instructions

Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.

Bring a large pot of salted water to a boil. Cook the cavatappi pasta, stirring occasionally, until al dente, about 8 minutes. Drain well.

In a separate pot, melt butter over medium-low heat. Stir in flour to form a smooth paste, about 30 seconds. Gradually whisk in 2 cups of milk and cook, whisking constantly, until the sauce thickens and is nearly boiling, 5 to 10 minutes.

Stir in the Gouda, Cheddar, Swiss, and 1 cup of Parmesan cheese, continuing to stir until the cheeses have fully melted and the sauce is smooth. Add the cooked cavatappi and mix until the pasta is well coated. Pour the mixture into the prepared baking dish.

In a small bowl, combine the remaining 1/2 cup of Parmesan cheese and bread crumbs. Sprinkle this mixture over the pasta and drizzle with truffle oil for extra flavor.

Bake in the preheated oven for 30 minutes, or until the sauce is bubbling and the topping is golden. Let the dish rest for 10 minutes before serving.
