Delicious Asian-Inspired Chicken Salad

¼ cup rice vinegar

¼ cup sesame oil

3 green onions, chopped

2 cloves garlic, minced

2 tablespoons white sugar

2 tablespoons ground ginger

2 tablespoons soy sauce

1 tablespoon vegetable oil

1 teaspoon ground coriander

2 teaspoons prepared yellow mustard

4 skinless, boneless chicken breast halves

¼ medium head shredded green cabbage

¼ medium head shredded red cabbage

2 large carrots, shredded

3 green onions, chopped

½ bunch cilantro, coarsely chopped leaves

½ cup slivered almonds
Cooking Instructions

In a bowl, whisk together rice vinegar, sesame oil, chopped green onions, garlic, sugar, ginger, soy sauce, vegetable oil, coriander, and mustard until the sugar dissolves. Set aside half of the dressing in a separate container for later use. Coat the chicken breasts with the remaining dressing, making sure they are well covered. Cover and refrigerate for 30 minutes to 1 hour.

Preheat the oven to 350°F (175°C). Take the chicken breasts out of the marinade and discard the remaining marinade. Place the chicken in a baking dish.

Roast the chicken in the oven for about 45 minutes, or until the center is no longer pink and the juices run clear. The internal temperature should reach at least 165°F (74°C). Remove from the oven and let cool. Shred the chicken using two forks and set aside.

To assemble the salad, mix together the green cabbage, red cabbage, shredded carrots, green onions, cilantro, almonds, and the cooled shredded chicken in a large bowl. Pour the reserved dressing over the mixture and toss until evenly coated.
