Instructions
Prepare all the ingredients for the recipe.

Preheat the oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
Place the potatoes in a large pot and cover them with salted water. Bring the water to a boil, then reduce the heat to medium-low and simmer until the potatoes are tender, about 20 minutes. Drain the potatoes and return them to the pot to allow them to dry.

In the meantime, arrange the bacon in a large skillet and cook over medium-high heat, turning occasionally, until it is evenly browned and crispy, about 10 minutes.

In the pot with the potatoes, combine 1 1/2 cups of Cheddar cheese, evaporated milk, 1/2 cup of green onions, sour cream, half of the crumbled bacon, salt, and black pepper. Use a potato masher to blend everything until smooth and creamy.

Evenly spread the mixture into the prepared baking dish.
