Delicious Low-Carb Cauliflower Mac 'n Cheese

1 head cauliflower, cut into florets

1 teaspoon mixed herbs

3 tablespoons olive oil

1 cup shredded Cheddar cheese

½ cup heavy whipping cream

1 tablespoon ghee (clarified butter)

1 pinch ground nutmeg

3 tablespoons grated Parmesan cheese
Instructions

Preheat the oven to 450°F (230°C). Prepare a baking sheet by lining it with aluminum foil.

Place cauliflower on the baking sheet. Season with salt, mixed herbs, and pepper. Drizzle with olive oil and toss to coat evenly.

Roast in the oven for 10-15 minutes until crisp. Transfer cauliflower to an 8-inch baking dish.

In a saucepan, combine Cheddar cheese, heavy cream, ghee, and nutmeg. Heat over medium heat, stirring occasionally, until the mixture is bubbly (about 5 minutes). Pour over the roasted cauliflower and mix well. Top with Parmesan cheese.
