Delicious Shrimp Scampi Linguine

1 (16 ounce) package linguine pasta

2 tablespoons unsalted butter

½ cup chopped red bell pepper

6 cloves garlic, sliced

48 large shrimp, peeled, deveined, and tails removed

½ cup dry white wine (such as Chardonnay)

¼ cup clam juice

1 teaspoon lemon juice

2 tablespoons unsalted butter

1 ½ tablespoons olive oil

3 tablespoons chopped fresh parsley

2 tablespoons heavy cream

1 ½ teaspoons crushed red pepper flakes, or to taste

1 teaspoon sea salt
Instructions
Bring a large pot of salted water to a boil. Cook the linguine in the boiling water until al dente, about 11 minutes. Save 1 cup of pasta water, then drain the linguine in a colander.
In a large skillet, melt 2 tablespoons of butter with 1 1/2 tablespoons of olive oil over medium heat. Add the bell peppers and garlic, cooking and stirring until the peppers are tender, about 10 minutes. Stir in the shrimp and cook until they turn pink and opaque, around 5 minutes. Remove the shrimp and set aside, leaving the peppers and garlic in the skillet.
Pour the wine, clam juice, and lemon juice into the skillet, bringing it to a boil over medium heat. Add the remaining 2 tablespoons of butter and 1 1/2 tablespoons of olive oil, then return the shrimp to the skillet. Stir in the reserved 1 cup of pasta water, parsley, cream, red pepper flakes, and sea salt. Add the cooked linguine and toss gently to coat. Let the scampi simmer on medium-low heat for about 5 minutes, allowing the linguine to absorb some of the sauce. Serve hot.
