Ditalini Pasta with Roasted Tomato Sauce and Goat Cheese

1 (28 ounce) can whole Italian plum tomatoes (such as San Marzano)

1 (16 ounce) package ditalini pasta

2 tablespoons fresh goat cheese, crumbled
Instructions
Preheat your oven to 425°F (220°C).
Drizzle olive oil over the bottom of a 9x13-inch baking dish. Add the tomatoes along with their juices, then cut each tomato into thirds. Sprinkle in the onion, garlic, red pepper flakes, and 2 teaspoons of oregano; mix well to combine.
Roast in the preheated oven for 1 hour. After removing the dish, give it a quick stir, then return it to the oven and roast for an additional 15 minutes.
Transfer the roasted tomato mixture to a saucepan and add water. Use an immersion blender or potato masher to process the mixture until you achieve your desired sauce thickness. Stir in 1 teaspoon of oregano and season with salt and pepper to taste. Set aside.
Fill a large pot with lightly salted water and bring it to a boil over high heat. Once boiling, add the ditalini and cook, stirring occasionally, until the pasta is al dente, about 8 to 10 minutes. Drain the pasta and return it to the pot.
Pour the tomato sauce over the cooked ditalini and mix well. Add the goat cheese and stir to incorporate.
