For the Meatloaf:

Preheat your oven to 300°F (150°C).

Prepare the meatloaf: In a large bowl, mix ground beef, breadcrumbs, paprika, cayenne, onion powder, garlic powder, black pepper, and salt until evenly combined. Press the mixture into an 8x8-inch baking dish.

Bake the meatloaf in the preheated oven for about 2 hours, or until fully cooked. Use a meat thermometer to ensure the internal temperature reaches 160°F (72°C). Allow to cool for at least 30 minutes before slicing; the longer it rests, the easier it will be to slice.

Prepare the sauce: In a jar, combine evaporated milk, sugar, and vinegar, then shake until thoroughly mixed. Set aside.

Heat a large skillet over medium-high heat. Slice the cooled meatloaf into thin pieces and fry in the skillet until both sides are browned. Remove from the pan and keep warm. Add a little water to the pan and lightly brown both sides of pita rounds to soften them.

Assemble the donairs: Place slices of meatloaf, tomatoes, and onions in the center of each pita. Drizzle with sauce and fold the pita over the fillings.
